Baboix is a red wine coupage of Grenache, Carignan, Tempranillo, Cabernet Sauvignon and Merlot from vineyards with decomposed granite soil with ladder organic matter. They are vineyards cultivated in terraces and mostly driven in trellis.
TASTING NOTE
It is a dry and complex wine due to the combination of aromas from grapes and wood. It is fleshy, velvety, full and round in the mouth.
ELABORATION
Each variety is fermented separately. The maceration is long and at a constant temperature of 26ºC. Subsequently malolactic fermentation is performed. Once finished the coupage is made and it is reared in barrels.
AGING
Aged in French and American oak barrels for about a year. Then it is bottled to age it another 4-6 months.
PAIRING
It is an ideal wine to accompany strong dishes that complement its voluptuousness. Ideal for game meats, beef stew and complex sauces, fish such as tuna, blue and cured cheeses and also bitter chocolate.
