Camí Pesseroles is a red wine coupage of Grenache and Carignan. It receives this name from the valley where the farms are located, cultivated as the ancestors did and whose situation gives the wine a mineral touch. Almost centennial vineyards on a ground slate floor combined with extremely fluffy clay.
TASTING NOTE
Red cherry color with violet reflections. Clean and bright. The nose is complex and very aromatic and intense wine with aromas of red fruit, noble woods and vanilla interspersed with spicy and mineral notes. It has a good entry in the mouth, powerful and with good acidity. Fruity wine with a long and persistent finish.
VINIFICATION
The harvest is done manually at the optimum moment of ripening of each variety and they initiate a separate carbonic maceration. Once the two wines are united, they develop a long fermentation in new wooden boots. For the aging of this wine, 225-liter French oak barrels were chosen, 30% new and the rest of the first year.
AGING
Aging for 20 months in the barrel and just rounded with another rest of several months in the bottle.
PAIRING
Ideal to accompany sausages and cheeses, roast lamb and beef, mushrooms and chocolate.
RECOMMENDATION
Decant the wine an hour before your service to appreciate the complexity of this organic wine.
