Cap de Ruc Criança Mediterranean, fresh and balanced wine. On the palate, very present tannins and an aromatic end of good intensity.
Because of its good aging potential is recommended to decant to enjoy their complexity. Keep all its virtues over the next 8 years.
Cap de Ruc Vintage is a Coupage of Grenache (60%) and Carignan (40%) red wine.
TASTING NOTE
Intense claret color with soft lilac signs. Acid Red fruit bouquets: blackberry, raspberries and cassis with oak vegetable hints in the backgorund. In the mouth, it's fresh. It has an aromatic ending.
PREPARATION
Handmade harvest and selection in boxes of 15 kg with a following thermal treatment at 5ºC. Fermentation at constant temperature of 25ºC computer controlled in tanks of20 and 30 Hl. "Pigeage" and traced by gravitation depending on the variety and extraction power. Maceration of the skins between 20 and 25 days adjusted to the potential of each variety and plot. Press presure is decreased in order to prolong the pressing.
AGING
Aged and malolactic over fine lees for 12 months in French Oak barrels of 300 and 400L.
PAIRING
It's perfect to join with meats, stews, smoked and fatty cheeses.
