Grenache Cap de Ruc is a Coupage of Grenache (85%) and Carignan (15%) young wine.
TASTING NOTE
Intense cherry color with soft mahogany tones. On the nose, it's balanced between the wood and the fruit. The lactic and vanilla bouquets melt with the ripe fruit. On the palate, it's soft but it fills the palate with balanced flavours. We feel the fruit and tannin bouquets.
PREPARATION
Handmade harvest and selection in boxes of 15 kg with a following thermal treatment at 5ºC. Fermentation at constant temperature of 25ºC computer controlled in an only tank of 50 Hl. 'Pigeage' and traced by gravitation and maceration of the skins between 20 and 25 days. Malolactic in tanks over fine lees. Press pressure is decreased in order to prolong the pressing.
AGING
Despite the fact of being a young wine, it rests 4 months in second year French Oak barrels.
PAIRING
It's perfect to join tapas with bread and tomato.
