Clos Dominic Vinyes Baixes is a Crianza red wine blend of Merlot (40%), Garnacha (30%), and Cariñena (30%) from vineyards located on the La Tena estate of the Clos Dominic winery (DOQ Priorat).
TASTING NOTES
Dark red color with a garnet rim. Abundant, fine, red tears. Aromas of ripe red and black fruit predominate on the nose, with light notes of soap, coffee, well-defined and present toasted notes, spices, balsamic notes, fine vanilla notes, and soft mineral and earthy notes. The palate has a powerful, astringent, and very fruity entry. Very marked barrel notes with slightly rough tannins, bitterness, and slightly high, persistent acidity. A long finish with a slightly mineral aftertaste and a floral retronasal aroma.
PRODUCTION
Made with grapes from the La Tena estate, the only estate operated by Clos Dominic. Fermented with the grape's own yeasts in stainless steel vats, then lightly pressed and placed in barrels. It is left to rest until bottling.
AGEING
Aged for 24 months in second- and third-year Allier French oak barrels.
PAIRING
Ideal with acorn-fed Iberian ham, roast lamb, duck, cured cheeses, grilled red meats, and rice dishes.
