Néctar is a wine made from Pedro Ximenez grapes in our own vineyards (Carrascal and Macharnudo) with 9 years of aging in the criaderas and solera system.
TASTING NOTES
Intense ebony color with very wide tears and a visual sensation of great intensity. On the nose it offers extremely rich aromas, with a predominance of sweet notes of dried fruits such as raisins, figs and dates accompanied by aromas of honey and licorice. On the palate it is a wine that is velvety and unctuous. Acidity that mitigates the extreme sweetness and warmth of the alcohol. It has a long, vibrant and tasty finish.
VINIFICATION AND AGEING
The grapes undergo the "asoleo" process, which consists of letting them dry in the sun, causing the water to evaporate and the sugar to concentrate. The grapes are then pressed, obtaining a must with a high sugar content that is partially fermented and fortified before being added to the solera of American oak barrels where it will rest for almost a decade.
PAIRING
It is ideal to enjoy on its own, with mature cheeses or desserts in general. But it should be noted that it is perfect with vanilla ice cream or dark chocolate.
