Identitas is a monovarietal white wine, 100% Subirat Parent from Bastards estate with more than 60 years located in Puigpelat (Alt Camp, Tarragona).
TASTING NOTE
Monovarietal wine from Subirat Parent of the malvasia family. Light and bright golden color. The nose is very expressive, elegant and sophisticated, which reminds us of the aromatic plants of the area and the orange blossom. The palate is dry and unctuous with fruity nuances, with a very marked acidity that will guarantee its perfect aging in the bottle. All this is the result of a careful fermentation in chestnut barrels, which integrates the tannins in a complex way and allows the communion of all the elements.
VINIFICATION
Manual harvest and ecological treatment. Selection of the best grapes and soft pressing. Alcoholic fermentation in chestnut boots, for 3 months with their lees performing the battonage technique.
