Javier Sanz Sauvignon Blanc is a single-varietal white wine, 100% Sauvignon Blanc from vines over 40 years old of this French grape variety located on the family estate on the Camino Real in La Seca.
TASTING NOTES
Pale yellow in color with greenish glints. The nose reveals characteristic varietal aromas of lime and white flowers. It also reveals notes of tropical fruit, such as pineapple and passion fruit. On the palate, it displays acidity that enhances the sensation of freshness and accentuates its tropical flavors. Medium-bodied, it is fresh, leaving a pleasant floral and mineral aftertaste.
PRODUCTION
Harvesting is done mechanically overnight to preserve the fruit. The winemaking process is meticulous, and after a brief maceration, the must is clarified by gravity for a day. Cold fermentation then takes place (at a temperature below 15°C) in stainless steel tanks. This process is carried out gradually to preserve the grape's aromas as much as possible. The wine is bottled after a brief two-month aging on its fine lees.
PAIRING
This wine is ideal with natural or lightly cooked mollusks, shellfish, or white fish. It also pairs well with cold dishes such as gazpacho, vichyssoise, or a delicious goat's cheese salad.
