La bicicleta voladora is a young red wine from Tempranillo (80%) and Viura (20%) made by organic viticulture and minimal intervention in vineyards between 19-48 years with calcareous soils and deep stoniness.
TASTING NOTE
Pale red color with purple highlights. A very clean, intense and bright wine. In the nose it is an aromatic wine where we can perceive aromas of fresh and red fruit, floral aromas and sweet notes. In the mouth it is fresh and fruity, with good acidity.
ELABORATION
Selection of grapes in the vineyard. Elaboration with destemmed grapes and without squeezing. It passes to concrete deposits and "eggs" Flextank where they perform a prefermentative maceration for 4 days. Soft reassembling is performed. The malolactic fermentation takes place in concrete tanks and subsequent aging for 7 months in concrete tanks and "eggs" Flextank. It is not filtered but very light clarification is performed with clays. Finally it stabilizes with the cold of the winter.
AGING
Aged for 7 months in concrete tanks and "egg" Flextank tanks.
PAIRING
Ideal to accompany sausages, roasts, grilled vegetables and semi-cured cheeses.
