Les Joveres de Margalef Negre is a Red WIne, Coupage of Grenache (50%), Carignian (45%) and Merlot (5%).
NOTA DE CATA
Cherry red color with intense ruby color reflections. On the nose, the red fruit bouquets such as cherry, plum and fig stand out. In the background, we feel a slight pepper bouquet from Merlot that provides elegance and persistence. Third bouquets of spices appear such as licorize, cinnamon and cocoa that come from oak barrels. In the mouth, it's a stirring and lively wine. The entrance is powerful and the nice tannins stands out. It's a balanced wine and its acidity gives us a good aging potential.
PREPARATION AND AGING
Careful selection of the grapes in the same grapevine. Handmade grape harvest in boxes of 12kg with a following thermal process of 8ºC. Monovarietal fermentation separating each of the varieties and an individual fermentation with a selected yeast for each variety. Constant temperature of 18ºC in stainless steel tanks until the end of the two fermentations. Skins' maceration for 15 days compliant with each variety and and following pressinbg. Careful blend of the varieties to obtain an elegant, fresh and balanced wine. Aging for 6 months in barrels of 225L to highlight the balsamic bouquets on the toasted dabs.
PAIRING
Perfect to join stews, grilled meat and fish, mature chesse and pasta.
