Baltana Negre is a red wine coupage of Cabernet Sauvignon (40%) and Merlot (60%) from young vines.
TASTING NOTE
Red wine of medium-low layer with violet-red and cherry-red tones. The nose has a touch of wood married with aromas of red fruit that stand out when they spend the minutes in the glass, also highlights the ripe strawberry and the touches of herbs of low-forest. The palate is a soft tannin wine, with a very elegant and sweet acidity.
ELABORATION
Harvested by machine at dawn, it arrives fresh early in the morning, still dark in the cellar. Skidding and direct deposit to the self-emptying tank. Pre-fermentative maceration of 1 day and quite cold, with remounts to extract the maximum fruit aroma. Maceration-fermentation of about 12-15 days according to the vintage, to extract all the qualities of the skin. Minimum bleeding and pressing of skins, according to tasting. Malolactic in stainless and then aging.
AGING
It ages between 5-8 months in French and American oak barrels.
PAIRING
An excellent wine to accompany a table of bread with tomato and homemade sausages, veal with mushrooms, cured sheep cheese or Catalan beans.
