Blanc Baltana is a white wine coupage of Macabeo (60%), Parellada (30%) and White Sauvignon (10%) from old vines over 70 years old located in the Finca de La Baltana.
TASTING NOTE
Light white wine in glass, pale and bright. On the nose, aromas of stone fruit stand out, such as apricots and white fruit such as Golden apple, and a tropical point. It also remembers the almond blossom or peach trees. In the mouth, its complexity stands out, an acidity that gives life to the wine, a light step but, after 10 seconds of its passage through the mouth it still persists.
ELABORATION
The grapes are harvested by hand and selected on the farm. Light pressing in the closed pneumatic press, static defrosting with cold and a controlled fermentation make us maintain the varietal aromas throughout the process. A slight aging on fine stainless lees, adds a touch of complexity to the wine.
AGING
The Macabeo is aged for 4 months in new French oak barrels.
PAIRING
Due to its acidity, it gives us a lot of play, we could try it with creamy goat cheeses, foie gras, white meat with juice, fresh pasta with cheeses or a mushroom risotto.
