Neudorf Moutere Pinot Noir is a single varietal red wine, 100% Pinot Noir made in New Zealand in the Neudorf winery in the Nelson Denomination of Origin.
VINIFICATION
The grape is harvested from two vineyards, once it is picked by hand it is transported to the winery where it is destemmed. Fermentation with natural yeasts in small batches at a controlled temperature of 32ºC in open tanks with three daily bazuqueos. The wine after a prolonged maceration to optimize the extracted tannins, later it is allowed to age. The wine finally passes through a malolactic fermentation for four months on its lees in stainless steel tanks before bottling without clarifying or filtering.
TASTING NOTE
Dark ruby color. Aromas of red fruit, cherry, plum, blackberry, interspersed with soft earthy tones, a touch of licorice and the seductive notes of wood. On the palate it is a rich and succulent wine, with a mild acidity, fine tannins, well structured to take us to a long and succulent finish.
AGING
Aging for 12 months in French oak barrels of which 22% are new to add complexity.
ADVICE
Ideal for drinking at the moment although its permanence in the bottle for at least eight more years will refine it with the passage of time.
