Pago de Capellanes Finca El Picón is a single-aged red wine, 100% Tinto Fino or Tempranillo clonal selection of the El Picón Fincal.
TASTING NOTE
Cherry cherry color, shows a wide intensity that allows to predict the long life that augurs. The first balsamic aromas, blackberries and undergrowth characteristic of the Ribera, with spicy touches (traditional in French oak) are detected, such as cinnamon, leather, tobacco, truffle and black licorice. The entrance to the mouth is complex, with sweet tannins that envelop the palate and cover it with an exquisite roundness. Long and persistent, it is a wine that is opening to our senses as we chase it.
ELABORATION
Fermentation and maceration: in order to extract the maximum expression of the quality of the vintage, it is fermented in French oak wood, with a strict temperature control and frequent pumping. After 40 days it is discovered for bleeding without the addition of presses.
Malolactic: slow and rested, without addition of bacteria, at 22º for 24 days in French Oakwood Cone.
AGING
Aging 26 months in new barrels 100% French oak selected grain (every 6 months), the rest in bottle. After breeding it is bottled without going through cold, neither clarify nor filter.
ADVICE
Uncork and decant a few hours before consumption, at a temperature between 16º-18ºC.
