Pago de los Capellanes Reserva is a monovarietal red wine, 100% Tempranillo from a selection of vineyards located in the town of Pedrosa de Duero. This wine is made of the oldest vines amd offers 100% the pleasure of time.
TASTING NOTE
Ruby color with intense garnet tones. The nose has a fine complexity with shades of ripe fruit, cherry, currant and smoky touches with a licorice background. Its passage through the mouth presents a great balance due to the maturity of its tannins.
ELABORATION
Harvest selected in boxes of 15kg. Cold pre-treatment for 6 days. Alcoholic fermentation in a controlled manner, with the addition of autochthonous yeast selected from our best vineyards, for 20 days with daily pumping over. The malolactic fermentation is carried out very slowly, without the addition of bacteria, tempering the cellar at 20ºC for 28 days. The wine rests for 14 months in French oak barrels of fine grain of 300l. It is bottled without filtering or clarifying.
