Pas del Caus is a red wine blend of Carignan (42%), Garnacha (36%), Syrah (16%), Cabernet Sauvignon (4%), and Merlot (2%) produced by the Bravo Escós winery located in Torroja del Priorat, DOQ Priorat. It is a young and fresh wine, linked to the vines and the terroir.
TASTING NOTES
Intense, bright cherry red color. This is a very aromatic wine dominated by fresh fruit such as red berries, citrus fruits, and floral and wild notes. The palate is fresh, smooth, and light. Good tension at the finish, with red berries, citrus fruits, and floral and wild notes, highlighting the great minerality of the graphite, leaving a refreshing and juicy finish.
PRODUCTION
The grapes used to make this wine come from vines that are approximately twenty years old, cultivated using sustainable agriculture and converted to organic farming. Spontaneous fermentation in stainless steel tanks and 500L plastic vats. Maceration lasts for six to eight days, followed by pressing to complete fermentation and aging in 1,100L polyethylene ovoids and 225L French oak barrels for three to four years.

This is an ideal wine to pair with cheeses and cured meats, as well as red meats.
