Rancio de Capçanes is a rancio wine blend of Grenache, Carignan, and Cabernet Sauvignon produced by Celler Capçanes (DO Montsant).
TASTING NOTES
Reddish gold in color. Pronounced aromas of tobacco leaves, cinnamon, and dried grass. On the palate, we find a medium body loaded with tertiary notes derived from the oxidative process during production: honey, nuts, and dried flowers. Complexity and tradition.
PRODUCTION
Once the blend is made, the wine is transferred to barrels, where the rancio wine mothers await. The wine is aged using the solera method, where every 5 years it is passed through different barrels for extended aging. It is during this process that oxidation is accelerated with the help of low humidity and temperature changes. Finally, the oak barrels containing the oldest wine are partially emptied, filtered, and bottled.
PAIRING
Ideal for desserts and appetizers, although it is recommended to pair it with dark chocolate, pastries, and nuts, such as olives and potatoes.
