Cap de Ruc Rosé is a Rosé wine made of Coupage of Syrah (65%) and Black Grenache (35%).
TASTING NOTE
Intense cherry color with soft bright raspberry hint. On the nose, it's a very aromatic wine. It stands out the ripe red fruits and roasted caramel bouquets. In the mouth, we feel the acid red fruit.
PREPARATION
Handmade harvest and classification in boxes of 15 kg with a following thermal treatment at -2ºC. Fermentation with skins in tanks of50 Hl. 'Pigeage' and traced by gravitation for five days until the desired maceration is obtained. Subsequent bleeding of the must in an only tank of 20 HL at a constant temperature of 15ºC computer controlled. Soft pressing and must extraction for 24h.
AGING
Aged 6 months in fine less.
PAIRING
It's perfect to join with any kind of meal but it's exceptional with cheeses.
