They are made with almonds, sugar and water. A dark syrup is made in a pan and almonds are added to it, which are cooked over high heat until the water has almost completely reduced. Then the heat is lowered and constantly stirred to impregnate the nuts from the paste into which the water and sugar have been transformed. Finally, the heat is raised again to caramelize the surface of the almonds, and they are allowed to cool.
Although the almond has an optimal consumption season, it is a fruit that is preserved for quite some time and the garrapinyat guarantees that it can be found almost all year round.
