Fermentation at a controlled temperature in stainless steel tanks with native yeast. The malolactic fermentation is also done in stainless steel. After its fermentation, an aging between wood and bottle is done for 5 years, as it name says. French and American wood, new and used barrels of 225 liters, vats of 20.000 liters. A long and complex process for a great wine.
The first year of aging is in barrels and it's specially important. They work with a 75% of French oak and 25% of American oak.
