Vimblanc Sol i Serena is a sweet wine, 100% Macabeo which is aged by the solera system.
TASTING NOTE
Amber color and with a lot of tears. It is a very aromatic wine dominated by raisins, dried apricots, dried figs and a delicate twist of aging. The palate has a sweet and unctuous entry confirming the aromas of passion fruit. It is a long and sweet wine, with a good acidity that provides a balanced finish.
VINIFICATION AND AGING
Manual harvest in boxes of 16kg at the end of August and later extended of the grape in tables to the satin to carry out the process of maduration during about ten or twelve days, depending on the climatology of the year. When it reaches 23º Baumé, it is skidded and pressed. The fermentation occurs slowly for more than 30 days until the process stops spontaneously. The elaboration ends with an aging by solera in French oak boots.
PAIRING
Ideal to accompany nuts and black chocolate desserts. You can also look for the contrast with foie gras and blue cheeses.
